A question I'm hoping will be answered here: If I use the host's wizard to set up my site, and later decide to change hosts, will my site be taken down and have to be redone?
Use an FTP client to download all of the files to your PC then upload them to the new host.
You'll biggest issue will be with MySQL, if you have a forum or blog then you'll also have to "backup" the old database, configure the site for the enw database, then restore the backup to the new database.

Thanks, Arjun. That's so nice of you. At the moment it's merely an academic question. It's just that I was looking at some of those hosts with web builders and wondering what the position would be if I went with one of them and later decided to change.
