does anyone know when setting up your domain at your host if you set up additional nameservers, if that improves the sites traffic or uptime

You probably mean at the registrar, not the host.
Only if the primary and/or the secondary, etc either go down, or are slow.

If the person's browser can't get the ip address for the name from the dns server(s), then effectively your site is unreachable to them. By the same token, if it takes too long to lookup the ip address, the person could get impatient and go somewhere else.

Keep in mind that most people are using their ISP's dns servers to lookup the web server's ip, which is (usually) using a cached address anyway. Only if the ISP's dns server has no record will it directly lookup the ip, which could cause a slight (though usually unnoticeably) delay.

All that said though, dns is generally very fast and reliable, and takes very little bandwidth, and rarely causes bad slowdowns.

Technically the nameservers should be on 2 separate networks. Since with most shared hosting or even dedicated hosting DNS is set up on the same network, it's a good idea to add more nameservers.
