I'm not sure what to use, though. I've tried Wordpress, which (by far) would be the easiest but the templates don't seen too good (I've thrown up a start to a WP site at http://www.casadelmango.info but it's not looking too good).
Does anyone have any suggestions? Joomla or Drupal? I think those might be a little beyond my wife for updating. We're looking to keep the site close to the .com - especially when you click on "dogs" (to the left) with the extra navigation bar,
She knows no HTML or any programming and was wondering about using a WYSIWYG editor but I think they just add too much "junk" into the code.

Have you looked into SilverStripe? http://www.silverstripe.org or
http://www.silverstripe.com
That looks interesting - I just downloaded it and a bunch of modules. I'll give it a try later on.

Joomla is my suggestion and its based on my experience
I think Joomla would be too much for my wife - she'd still run to me for every little update
Yes, but look at the .info site - that is what it would look like w/ WP. Not sure if that's what she wants. Well, maybe I could set up a separate page for each dog?
