Please have a look at my website, surfproof.com.

This is by far the most enjoyable site I have ever made for the simple fact that I'm finding a ton of interesting stuff!

Now, my questions:

I'm going for simplicity with this one. Is it too simple? Do you think it could use any kind of upgrade in the template/graphics department?

How about the structure, categories, ebook listings, etc?

This reminded me of George Carlin. He did one skit entitled "My stuff is stuff, your stuff is sh**"

I think you should change http://surfproof.com/ebooks.php to be the index. The index doesn't have a clear indication of where the user can go next. Other than that, looks good. Simple sites are good, keep the visitors attention exactly where you want it.

I think you should shrink the size of your header by about 60px.
That would fit almost the whole site in the viewing area.

Make the BookMark Us image clickable so that it actually book marks the page.
People are lazy and confused by graphics that look like they should do "something" but don't...they may think your site isn't working properly and cause them to leave.

The link Guides and ebooks is a different color than the rest of the links and makes me think I am on that page...constantly...

Yeah, I really should add a simple script for the bookmark image. Changing the Ebooks link to white is a good idea also.

I'm not sure why you think the header needs to be shrunk, though.

I forgot to mention earlier..

I'm actually considering switching to a portal to make adding new E-Books easier. Right now I'm using forntpage which, needless to say, takes alot of time to edit when I'm adding 15-20 ebook listings manually.

I have CGPNuke and Mambo woth in mind. Would there be anyother CMS's that would be more ideal for creating a "listing" type addition for my guides and ebooks?

Just search around the web and at dynamic drive or hot scripts.

A backend with a quick add feature is what it sounds like your looking for..no?

The curved gray line above the white main section is really pixelated. I'd suggest doing that image over but other than that it's short, sweet, and to the point.
