Support docs say you can't, but it looks like all that happens when you do use their name servers is they add mxforward.moniker.com as the MX record for a domain. So if email forwarding is enabled for a domain, will this still work if the DNS is hosted elsewhere and you simply add that MX record?

Yes, you can host your website anywhere and use any separate email provider - as you say, it's the MX records in the zone that define the email service.

email forwarding does require the use of Moniker name servers. We are here to assist 7:00am-8:00pm EST M-F and 8:00am - 6:00pm EST Sat/Sun. Or please open a case through your account portal.
