of a list of UDRP decisions that have been appealed to
a Court, in any Country ?. Only one I know is the barcelona.com
case but must be more than that surely ?.
I am trying to see if anyone has done same as barcelona.com
in another Country, or any others at all really see whether
I can work out the best jurisdiction to grab to protect domains.

LH.com comes to mind.
"Appeal" is not quite the right word. As stated in UDRP 4(k), the point is to seek an independent adjudication.
There is a list of ones known to WIPO posted at their site.
Off the top of my head, court cases were filed after:
traditions.com
abt.com
lomonaco.com
buypc.com
freebies.com - (the judge in that case ripped the NAF panelist)
At the moment, I am aware of one pending in Arizona relative to aspis.com, in which the UDRP Complainant has been served, has not appeared, and a default motion against them is pending before the court.
A preliminary hearing was held today in the case pending relative to chillibeans.com.
It is quite typical in these cases for the Complainant to attempt to deny the jurisdiction to which they admitted in the Complaint, or simply not to show up.
There is a spate of cases relating to met-art.com pending in Luxembourg and Australia.

Thanks for the aspis.com update, Jonh. What is the timeframe for the finalization of the case; also, why Arizona?
Registrar is GoDaddy.why Arizona?
Courts do not have deadlines for acting on motions.
