I noticed a domain I am trying to catch has an expiration date of November 31st 2009. But, it is pending deletion. If I successfully register this domain, will the 'created on' stay with the domain making it an 'old' domain?

No, not if it drops.

Try to get it pre-drop, like TDNAM etc, then the date will stay the same.
