I am reading The Domain Book now, and there is something I don't understand. Why is it beneficial to have a good template on your parking site?

The idea of a parked domain is not just to have visitors arrive at your domain, its to have them click through and make you money - a good parking template will help you get those clicks
good templates are usually the simple ones. You want people to click ads, not admire your site.

Your best bet for a better revenue generating parked domain is to park it yourself. You have 100% control over the content and SEO plus you eliminate the middle man and get the revenue directly from the feeds (usually Google) plus other affiliate ads.
sedo's parked pages are OK at best.

Yes, a mini site. 3-10 pages of good content.
What I've done with a couple is have a few simple pages with good (and original) content. I use AdSense (Google) for ads on the sites plus some related referral ads.
For example, if I had a self parked page about domaining I would have a few pages (FAQ, content, maybe some news) plus AdSense in some places and a few banners for referrals (DNF, sedo, Afternic, GoDaddy, etc..).
The pages are small so you can fit thousands of them on even the smallest Hosting plans.

The point of a parked page is to encourage the visitor to click through.
When a surfer hits the page, you only have a few seconds to catch their attention or they're going to move on. A good template encourages them to click by putting relevant links right in their eyeline. Anything that engages the surfer, like a great picture, that keeps them there longer, increases your chances of getting a click.
