If someone buys product X from store XYZ and posts a product review, is this content subject by copyright from either the store or buyer, is it the buyers' intellectual property or is it free game?
Are you asking if you can copy that review and put it on your website?

Are you needing reviews for a website or something? You can do paid reviews. Not really recommend it but if you are wanting to sell products there are people out there that will do reviews for you by paying them.

I've seen article writers etc, but not writers for specific items.
How am I supposed to trust a great review on let's say, a Nikon D80, if nobody has owned it?
If you are wanting to find real people for real reviews you will have to include in your classified of what you are looking for:
Seeking individuals who have used a specified product to write honest reviews on them. That's about the only way to get real reviews.
