Offer something (has perceived value, but, almost zero cost) for free.
It could be ebook which somehow related to your site.
"Sign up and get FREE ~~~~"
I get a lot of registrations from visitors off my Joomla sites and Coppermine galleries.
Give them whatever they came for. Whatever they arrived to your webpage for, offer it to them... via email. Make it as easy and straightforward as possible. One form input for an email address, one submit button with a call to action phrase "Send me <whatever I came here for>".
A surprising number of people will drop in their email address without hesitation for something they want, even if it's just a bit of information they could get by hitting back and doing another google search.
To find out what your visitors are coming to your website looking for, look at your webstats and see what search engine terms they're using to find it.
If it sounds too good to be true, post it on DNForum and you'll find some suckers!
could try feedburner also.
