Its a generic question because all hosts claim they have malware security, virus etc protection, however without talking with people that actually have used a particular host, you will get the same song and dance from all of them ../....
Well I will talk about using servint all day if you got the time.
They are pro's,.. and I can connect you with sales or tech support, all of which I trust.
But like I said, I aint in it for the money, I have just used a dozen hosts of many years, and I have stuck with these guys for a long time well satisfied.
The song and dance you speak of, is mostly about how you are using their Hosting service.
A vps or dedicated server means YOU can expose your setup to any of those malidies just by your actions. But I guess you are asking do they do backups, or real time scanning,... and that depends exactly on how you are using their service?
A simple wordpress, or maybe a forum,... or are you setting up a torrent service?
It all depends, and they will never commit to a self-inflicted vulnerability.

If you are going to use Windows platform then one thing you need to know, if you opt third party anti-virus like ClamAV, Norton, AVG, etc to protect your server from malware attacks, then Microsoft's default security system will get disabled automatically.
I am curious what you guys use mainly to host your websites. Currently i am sticking with Hostgator and Firehost for most of my domains. I also use some other hosts for testing SEO techniques with some websites.

Most hosts included malware scanning, when you're looking for "Secure" on a public/shared network like in that context it's mostly about their internal network policies and policing of their network, hardening your server, etc.
I've been a fan of ServerBeach / PEER1 for nearly a decade.
