Well, personally, I don't have the time to do much with affiliate programs. I am doing some and have done so in the past. That is why I like Pay Per Click programs, like Domain Sponsor and Fabulous. They cover all of the fields you listed, and many more. So, the traffic has to be very good to warrant my spending the time required for affiliate sites. My main focus is on acquiring domain names now for sale or development in the future.

"Scheme" implies something devious.
You may have difficulty getting info on affiliates because we all tend to keep the good ideas close to the vest.
Aside from Amazon as a good general program, try Commission Junction. They have programs that fit your categories. And they have a business model that ensures affiliates will be paid by the company. Payment is sometimes the biggest challenge for affiliates.
As someone else mentioned, 5 Star Affiliates may also be a good resource on this board.
