There wouldn't be much effort to it at all. In an hour or two (even if you know nothing about web design), you could go to a site like http://www.freesitetemplates.com and get a website template. Then, make a quick logo with photoshop or paintshop pro. Next, do a quick search on yahoo for low fat recipes. E-mail the copyright owners of the recipes and ask them if you could republish them unabridged, as is, giving them full credit. Do the same thing with "healthy eating tips" and you've increased the perceived value of your domain name.

I don't believe you could sell these domain names on ebay, as they are, for $50-$75 together (not without a developed website).

But, if you're that confident that he could resell them so easily, maybe you should buy them from him (if he wants to unload them cheap) and make a quick $50.
