I have a domain that is like:

BLAH.com (that's not really the domain, im just using it for example)

So BLAH.com is PR2, but then, BLAH.com/directory/index.php = PR5

If I have the domain redirect to another site... is it the same as a PR5 redirecting? Or only PR2?

(I.e. would it be best to forward the individual pages or the whole domain to my new site for PR purposes)

It should be neither, redirects aint s'pose to count at all but if you linked from the PR 5 section to whatever, that will count as a PR 5 link and should give you a PR 3, maximum PR 4. But saying that, if its just a blank page, with no content then it may not count at all....

... redirects do count...

I had 2 PR5's pointing to one of my sites that turned into a PR4.

but i see what you are saying
