I own a domain (in the anti-aging category). It is the same as the title of a book currently on sale (published in 2000).

The phrase is a somewhat common one (45,000 returns on Google) and is not trademarked.

I will not be publishing a book, but want to develop an anti-aging diet blog.

Will the book publisher / author have legal recourse if I do so?

Just did a Copyright search as well. Nothing on it.
 
is the book a single publishing or is it a series?

It is a single book, last published in 2000.
 
single titles do not enjoy the same protection that series enjoy.
From what little info you've given, it doesn't sound to me like you'll have a problem but you need to keep in mind that anyone can file suit against anyone for any reason at any time... doesn't mean they are right, that they are assured victory, or anything like that... but it does mean a defense will need to be afforded. So, in situations like the one you describe, I tend to look at exactly what sort of bear am I poking with the stick... before I pick up the stick.
 
Good thoughts, Cartoonz. This probably isn't worth messing with anyway. I have other domains I can use for the website. Thanks for your advice
