Would like your opinion on whether you think Google and the other search engines see buying aged domain names with back links and page rank as black hat (unethical) once you put sites on there?

Probably not black hat if you keep it to content related to the keywords in the domain, or the subject that got it it's page rank. If it was previously a travel site and you change it to adult or gambling content, that wouldn't be good.

why would a practice be labeled as such, if thought to be unethical?

I think maybe people see it as a short cut and therefore unethical but I look at it as recycling :-)

Not at all. That would be like saying google buying youtube was unethical. It's business.
