Is there any way to see how many other people are targetting a domain using that service?

Before the auction begins? No.
After the auction begins then you can see a list of ALL the people that are in the auction in snapnames. In pool you can only see those that have made a successful bid.

So I guess my question is as follows... suppose I bid on a really good name that somehow no one else has bid against, what is to stop Pool "pretending" to be another user and bidding against me to push up the price?

After all I dont believe either Pool or Snapnames is regulated by ICANN or anyone, so its in their interest to do this, isnt it?

If they were to be doing this then they had better be very careful indeed. While they may not be regulated, fraud is a pretty serious offense just about everywhere.
