What should I know and do in order to keep my domain safe (stolen or snapped or anything?

make sure all the contact info (whois) is accurate and up to date

lock your domain at the registrar

do not share your passwords

add more years to registration period, so you don't have to worry about renewals.

use a secure registrar

My domains are locked as a default?
 
Your domains are only as secure as your registrar contact email address.

If your registrar allows this (GoDaddy and Moniker do allow this) do not use the same email address as your WhoIs contact and the regsitrar contact - and do not give out the registrar contact email address to anyone other than the regsitrars.
