If you buy a website where the past owner was making money from adsense, how do you collect on it? Do you just add the site to your adsense account? does he have to remove it from his?

The easiest way is to change the Publisher ID in the Adsense code from his to yours.
<script type="text/javascript"><!--
google_ad_client = "Put your Publisher ID here";
/* 728x90, created 9/24/08 */
google_ad_slot = "7121941508";
google_ad_width = 728;
google_ad_height = 90;
//-->
</script>
google_ad_client = "Put your Publisher ID here";
/* 728x90, created 9/24/08 */
google_ad_slot = "7121941508";
google_ad_width = 728;
google_ad_height = 90;
<script type="text/javascript">
src="http://pagead2.googlesyndication.com/pagead/show_ads.js">
</script>
You can find your Published ID at the top of your Adsense account.

My understanding is you just need to change the publisher ID
you may do some promotion as well.

google_ad_channel = "7305833999";

If the previous owner used custom channels you should edit that as well as the pub id. The above is the old adsense code.

The new code you will need to change the ad slot along with the pub id.
google_ad_slot = "4687183999";

You can leave it empty if you like.
google_ad_slot = "";

You get your publisher id when you log in to your account - top right corner.

I'd suggest just replacing the existing code outright with your own. That way you can program your own custom channels and ad slots - especially so if you plan on having more than one website or want to track individual pages or even ad positions. Using the new system you can edit your ads from your control panel instead of having to cut and paste and/or editing the code manually.
