If I were to create opencart websites for people, not editing too much from the original template, adding products etc, how much should I charge?

I would advise you to first setup a few such sites for you/your friends. When you are doing this, time yourself how much time you spend doing it and then set the price accordingly.. Also consider the time you will need to find new clients as many people are already doing this.
