What's the most secure way people have found to buy and sell names?

Or some other way?

What happens if you sell a name thru Escrow.com and 2 weeks after you make the transfer, the buyer claims being a fraud victim?

Wouldn't money be reversed and you would have no recourse to get your name back?

Escrow will hold the payment for you, if both party don't agree, then the money will stay in escrow 'till the dispute or any issue is resolve. Read the escrow process for more details.
