I'm watching a domain registered at register.com that is not in the zone file. Register.com's whois says:

Does anyone have any idea what this means? I've never seen a domain in this state before.

Those domains may not expired yet and they may have real nameservers linked in central registry. They simply not included in whois database. It is incorrect, but this does not mean those domains may drop someday...

However if the domain is going to be dropped, whois record may be removed first, so you would see exactly what you quoted for soon-to-be-dropped domain

You're mistaken:
lx.com is registered with bulkregister until 27th May 2004.
game.com is registered with NetSol until 29th May 2003.

The domain I'm watching is not in the zone file, and although it is registered at register.com their whois says "Not found"

You are right about those two domains. By some reason, Watch My Domains software reports register.com although they are not at register.com
OK another examples:
lasvegasporsche.com
playave.com
those are sitting at register.com with empty whois for many months... I guess it is time to submit whois complaint to internic...
