I got an offer of $1100 for a domain that I've only owned for two weeks:

This is from an end-user, by the way.

Should I take it or hold on to it? I'm hesitant because the domain has a myriad of possibilities (credit cards, sports, any campaigns/promotions with "gold" in the title).

Take it. I've gotten over a dozen inquiries on domains I own. All ask "is the domain for sale" "How much is it". I don't think I once had someone offer me an amount right off the bat without asking me to quote a price first.

I would take the offer, don't be greedy.

I don't know if its been done before but offer them a referral incentive that if they send a new Client your way they would earn a certain percent on the sale.

You never know who or how many people they may know.
