So If you have 10k adult uniques a day spread over 3 domains how do you monetize them best?

Assuming you have no time to develop them yourself,

Do you send to adult affiliate sites or adult affiliate toy site, or is there a third good option?

I was getting very high conversions on a Fling.com offer for adult traffic a while back.

The free trial paid something like $30.00/lead.

I ran it for a few months and haven't done any adult since, so don't know if the offer is still up and paying.

There are plenty of adult affiliate programs, depends on the category of traffic.
I could advice better knowing some keywords or the domains.

For toys, check out fleshlight.com's aff program

I find web cams convert best with non niche adult traffic followed by porn and then adult toys/dvds etc.
If you have a niche obviously look for a matching program that suits.
The adult web master boards usually go over the pros and cons of the different adult affiliate programs so it might be worth checking them out or Im happy to point you to the programs that convert for me if you send me a PM.

maybe pay someone to build a TGP or video tube site, forward the adult visitors to that site and monetize it with affiliate ads. that way you will get a lot of returning visitors who also generate content,which will increase your traffic and revenue over time
