Basicly, two meanings:

1. An unconference is a conference where the content of the sessions is driven and created by the participants, generally day-by-day during the course of the event, rather than by a single organizer, or small group of organizers, in advance. To date, the term is primarily in use in the geek community. Unconference processes like Open Space Technology, however, have been around for over 20 years in other contexts.

2. UN stands for United Nations, so unconference means "United Nations Conference"

I particular like the 1st meaning coz I have experience of unconference, and yes, positive result and interesting. Thats why I searched this keyword, and wow, the .org is still there waiting for me. :humble:

IMO the domain would fit for a site like
http://www.unwatch.org/
ie. provide news of the world with a critical eye on the UN and its member nations.
"Unconference" is not a very common word and I think UN+conference is more obvious.
Since it's .org you might develop about the UN conferences and protocols on climate change population etc.
