Sorry to be that guy, but does domain age matter in term of ranking in searches?
A quick search seems to mostly return the answer it is a MYTH and domain age does nothing in term of SEO.
In short, Google doesn't care.

I looked a bit more into it. I do believe the age of the domain probably doesn't change anything.
However, the term "aged domain" might be a little misleading as it doesn't have much to do with the age in itself.
So OK, I understand better now.

What is exactly the difference between a "niche" website and a "regular" website, tho?
Except the topic, which may admittedly be more specific.
