These poker related domains don't get any traffic...

PokerMillionaires.org
Poker-Millionaires.com

I have been offered $1,500 today for all of the above and the buyer is not concerned about the lack of traffic.

Worth anymore? Or is this a fair offer?

The two words work together.
Do you know who the buyer is? If you are not
desperate to sell, I would counter with a higher
number for all domains, a number you would be
very happy with. Even if the buyer declines there
is no worry in holding names like that for longer.
You could probably counter with a mid $x,xxx to
(why not) $10,000 counter-offer. If it's a buyer with
deep pockets planning to develop a business around the
name, it might be chump change to them. Or, they
may counter with a higher offer than their first.
As a rule, I'd say always give a counter-offer unless
you have an asking price that they meet right at the start.
