Appraisals are pretty much what people "think" a name is worth, based off of a number of factors. Some people think certain factors apply, some people think certain factors are entirely irrelevant. For domain names (unlike realty) its a toss up. Expensive names in the same space may or may NOT have an effect on the name in question.

That said, I personally wouldn't think iCulinary.com had much *inherent* value to it. Perhaps eCulinary.com. It's a category think. I think iTunes works as a nicer branding than eTunes.
